Zbyszek Gawron is half American, half Polish and grew up in Texas. For the last 8 years he has worked as a chef in Warsaw. Zbyszek‘s speciality is comfort food made from pure flavors and local products
For the 5th birthday of Polish Dinner Thursdays we’ll be serving you the following.
1. Mushroom soup made with fermented rye, porcini, potato, egg
2. Duck liver mousse, quince sauce, pickled wild mushroom, charred shallot, challah
3. Braised beef tongue, roasted pumpkin, plum, yellow beet horseradish sauce, marjoram
4. Poached pears, cranberry sauce, carmelized salted walnuts, buffalo grass whipped cream
