We manage inside and outside catering at the French Embassy in Berlin where we make French pastries, private dinners and business lunch delivery. Most of our working time is in offices hours and we rarely work weekends.

    YOU

    • Create and produce “dish of the day” every weekday for employees of the French Embassy (30 to 80 people)
    • Stock management (and waste management)
    • Creation of menus for catering events
    • Manage the event caterings within the kitchen
    • Manage the work of small team (never more than 3 people at the same time)

    Das Speiselokal Nobelhart & Schmutzig

    Das Speiselokal Nobelhart & Schmutzig öffnete am 11. Februar 2015 seine Tore. Unter der Leitung von Inhaber Billy Wagner und Küchenchef Micha Schäfer umfasst es 28 Sitzplätze um eine offene Küche. Somit ist im Speiselokal Nobelhart & Schmutzig die Küche in den Gastraum integriert. Zusätzlich zu den Thekenplätzen verfügt es über einen ovalen Tisch für bis zu 14 Personen. Nur neun Monate später verlieh der Guide Michelin dem Nobelhart & Schmutzig, den ersten Stern, der Gault Millau zeichnete das Lokal mit 16 von 20 Punkten aus. Weiterhin erhielten wir es die Auszeichnung „Gastronomiekonzept des Jahres 2015“, verliehen vom internationalen Gastronomie-Magazin Rolling Pin und im September 2016 wurden wir von Deutschlands wichtigsten Food Magazin „Der Feinschmecker” zum „Restaurant des Jahres 2017“ ausgezeichnet.

    Das Speiselokal Nobelhart & Schmutzig ist ein ganzheitliches Konzept. Es wird ein aufeinander abgestimmtes Menü von zehn Gängen serviert. Dabei richten wir uns nach der Jahreszeit sowie der Verfügbarkeit der Produkte. Um sich auf den Geschmack der Produkte zu fokussieren, konzentriert sich die Küche von Micha Schäfer auf zwei bis vier Geschmacksrichtungen pro Gericht. Diese Küche nennen wir „Brutal lokal“. Dabei beschränken wir uns nicht nur auf die Auswahl regionaler Grundprodukte, sondern denken den Gedanken zu Ende – was letztendlich den Verzicht von Olivenöl, Pfeffer, Muskatnuss, Zitrusfrüchten sowie Vanille, Zimt und natürlich Schokolade etc. bedeutet.
